so i recieved my first dozen (or a little more) cookies in the mail on tuesday and i have another one waiting for me today but the office was closed by the time i got home so theyre going to have to wait until tomorrow sadly since i am so excited to see what they are!!
last saturday, i spent basically the entire morning deciding what to bake and then when i finally made up my mind, baking.
i knew i wanted to do a softie cookie because, although you may not be able to tell by reading my only 2 posts, theyre my favorite. but i didnt want to just send a boring chocolate cookie. so! after taking a subtle hint from my candy bowl on my counter, i realized PEANUT BUTTER!! Ha! how perfect. ill make a chocolate cookie with a peanut butter filling. and so thats what i did. the peanut butter filling is the most absolute simple thing to ever make and can be used for many different things. not only that but you can make Nutella* filling or use whatever kind of butter (except maybe just plain butter) you have and just simply mix it with confectioners (powdered) sugar until you reach an almost doughy consistency, just past sticky but tacky enough to make into a ball shape. thats it!
So, for the Peanut Butter filling
1/2 Cup Peanut Butter
(around) 3/4 Cup Confectioners Sugar
The cookie part itself is also extremely easy to make and you can make it fun especially if you have a partner to help you in the kitchen!
Chocolate Cookie Recipe
1/2 Cup Sugar
1/2 Cup Brown Sugar (light or dark, both work fine)
1/2 Cup Butter (softened)
1/4 Cup Peanut Butter (added a little more, just cause i LOVE peanut butter)
1 Egg
1 Tsp Milk
1 & 1/2 Cups Flour
1/2 Cup Cocoa
Dash of salt (1/4 Tsp)
1/2 Tsp Baking Soda
In one bowl, combine the flour, cocoa, salt and baking soda. ( see above…Im getting the hang of this!!!)

In another bowl, combine the sugars and blend in the butter. Then add the peanut butter until they are well mixed. When they are, add the egg and milk. Mix well.
Slowly add the two bowls together, mixing well, until you reach a thick, chocolatey cookie dough.
[This recipe should make about 30 cookies, depending on how big you make them.]
Now, time to get down and dirty. Form a small ball with the chocolate cookie dough.

On wax paper, flatten it gently with your palm, but not too thin!

Using the peanut butter filling, make an even smaller ball (about half the size of the chocolate one) and place it in the center of the chocolate cookie.


Then, mold the chocolate around the peanut butter, making sure not to let any of the filling leak out.

Place the cookies on a baking sheet around an inch and a half apart. Bake for around 8 minutes, and ENJOY!!
Note: although i dont often enough blog about the recipes i use or come up with, i do often cook and bake, and i mean it when i say i put a lot of TLC into these cookies! There are times when im cooking for my husband and i and i dont care about presentation because were gonna eat it anyway, and there are times when im cooking or baking for others and theyve never met me or know who i am so i want to try and impress them. And this was a time where i wanted to at least try and impress someone.

And im pretty darn proud of myself!!!!!!!!!!!
At this time, i have recieved all of my cookies in the mail! And it was worth the wait! I would like to say thank you to Kara from Staten Island, NY for the little “mochi-bunny” cookies and green tea cookies. I received them the week before i ran my PRT (Its a physical fitness test, im in the Navy, long boring story), and i am happy to say i didnt feel guilty about eating them at all! The next batch i recieved were from Vicki @ http://wildeinthekitchen.blogspot.com/ She made some delicious chocolate marshmallow cookies with, (can i say jimmies here? better not risk it), SPRINKLES on top! Not only were they yummy, but they were so pretty and came in a cute little tin!

The last batch of cookies i received were absolutely my favorite ones. They were the perfect combo of sugar cookie and Nutella (of course the cherry ones were awesome too, but just about anything with Nutella in it is my weak spot. Im Nutella obsessed!) So imagine my joy when i realized which ones were filled with my favorite spread. So maybe i had to try a few with cherries before i got to them, whos to judge me? Ha!

Anyway, i wanted to thank you so very much for the cookies, and i just looked at Sue’s page, http://simplycooking101.wordpress.com/ and realized that she got cookies from Vicki and Kara too! How strange, but cool! I wonder if Kara and Sue planned to send me the same packaging!? AH, small world after all….
